Festive Honey and Orange Roasted Chicken Recipe

Ingredients:

6-8 chicken drumsticks or thighs

1 orange, sliced into thick rounds

4 cloves of garlic, chopped

1 cup freshly squeezed orange juice

3 tablespoons honey

2 tablespoons soy sauce

1 tablespoon olive oil
-
1 tablespoon lemon juice
-
1 teaspoon whole grain mustard

4-5 fresh thyme sprigs

A little grated orange zest
-
Salt
-
Black pepper
Preparation Method:

Arrange the chicken pieces in a baking dish and scatter the orange slices and thyme sprigs between them.

In a bowl, mix the orange juice, honey, soy sauce, olive oil, lemon juice, mustard, garlic, orange zest, salt, and black pepper.

Pour the sauce over the chicken and massage well on all sides. Marinate in the refrigerator for one to two hours, or overnight.

Preheat the oven to 180°C (350°F). Cover the dish and bake for an hour and a quarter to an hour and a half.

Remove the cover, spoon the juices from the bottom of the pan over the chicken, and roast uncovered for another 15 minutes. Baste the chicken once or twice during roasting.

Remove from the oven when the chicken is golden brown and the sauce has reduced to a thick, glossy glaze. Serve with the roasted orange slices and pour the remaining sauce on top.
