Yom Kippur brings a unique focus to food, from the pre-fast meal that needs to sustain us without causing heaviness, to the post-fast cravings. After hours without food or drink, you don't necessarily have to start with a massive feast. Here are three simple recipes for the holiday, courtesy of the nutrition department at appliance brand Teka, designed to keep things light and satisfying.
Before the Fast: Japanese-Style Rice
Preparing for the fast requires balanced energy. This seasoned rice dish offers a delicate flavor profile that prepares the body without overwhelming the stomach.
Ingredients:

500g round rice

70 ml rice vinegar or mirin

50g sugar

20g salt
-
600 ml water
Instructions:
Wash the rice thoroughly in cold water several times until the water runs almost clear. Transfer to a pot and add 600 ml of cold water. Bring to a boil, cover, and cook on low heat until the rice absorbs the water and softens. Meanwhile, prepare the seasoning: mix the rice vinegar, sugar, and salt in a small pot and heat on low, stirring, until completely dissolved. Remove the rice from the heat and gradually add the vinegar mixture, stirring gently to avoid mashing the rice. Let it cool slightly before serving.
After the Fast: Warm Chai Latte
Breaking the fast gently is essential for digestion. A warm, spiced beverage helps rehydrate and comfort the body.
Ingredients for 2 servings:

300 ml milk

1 cinnamon stick

1 star anise

1 tablespoon silan (date syrup)

1 teaspoon ground ginger

1/4 teaspoon turmeric

1 black tea bag

Pinch of nutmeg
Instructions:
Place the water, cinnamon stick, anise, silan, ginger, turmeric, black tea bag, and nutmeg in a pot. Bring to a boil and simmer on low heat for about 15 minutes. Add the milk and heat gently without bringing to a strong boil. Strain and serve hot. For those sensitive to caffeine in the evening, a decaf tea option can be used.
Something Sweet: Easy Orange Cake
To accompany your post-fast drink, a light citrus cake provides a refreshing treat without being overly heavy.
Ingredients:

260g orange-flavored yogurt

225g brown sugar

165g olive oil

150 ml orange juice

75g semolina

25g cornstarch

18g baking powder

6g baking soda

Instructions:
Preheat the oven to 180 degrees Celsius. Mix all the dry ingredients in one bowl, and in a separate bowl, mix the yogurt, olive oil, and orange juice. Pour the wet mixture into the dry ingredients and mix well until smooth and the sugar is fully incorporated. Let the batter rest for a few minutes. Line a round baking pan with parchment paper and pour the batter in. Bake for about 45 minutes. Insert a toothpick into the center of the cake, and if it comes out clean, the cake is ready. Let the cake cool completely before slicing and serving.
