The secret to extra-tender beef: noodles better than takeout, prepared in half an hour
One pan and less than half an hour of work: no need to order takeout to get juicy noodles like in a restaurant. A few minutes in a wok, a simple sauce, and one trick with the beef will do the job.

When it comes to takeout, the combination of juicy beef and crunchy broccoli is a classic that is hard to beat. This homemade version takes the familiar Asian dish a few steps further, with fresh ingredients, a rich sauce, and a quick stir-fry technique that keeps the beef juicy and the vegetables crisp.
And the bonus? It's a tasty, satisfying family dinner ready in less than half an hour — exactly what you need when craving takeout-style food, but much fresher.
Ingredients
For the beef, vegetables, and noodles:

450g beef (rump, sirloin, or fillet), sliced into thin strips against the grain

2 medium broccoli heads, cut into bite-sized florets

1/4 red or white onion, thinly sliced

2 garlic cloves, crushed

1 tsp fresh ginger, grated

300g noodles (chow mein, egg noodles, or spaghetti), cooked al dente

2 tbsp neutral oil (canola, sunflower, or refined sesame) for stir-frying
For the sauce:

1/3 cup soy sauce

2–3 tbsp hoisin sauce

1–2 tbsp rice vinegar

1/4 cup honey or natural silan (date syrup)

1–2 tsp toasted sesame oil

1/2 tsp white pepper
-
1 tsp onion powder
-
1/2 tsp ground ginger (if not using fresh)
For thickening:

2 tsp cornstarch

3 tbsp cold water
Preparation

Cook the noodles: Boil according to package instructions, but shorten the time by one minute to keep them firm. Drain, rinse with cold water, and toss with a little oil to prevent sticking.

Prepare the sauce: Whisk together the soy sauce, hoisin, vinegar, honey, pepper, onion powder, and ginger. In a separate small bowl, mix the cornstarch and cold water until smooth.

Sear the beef: Heat a wok or deep pan over high heat. Add oil and sear the beef in a single layer. Cook for about a minute without stirring to get a nice brown crust, then toss for another minute until the color changes. Remove and set aside — do not overcook.

Stir-fry vegetables: In the same pan, add the remaining oil, garlic, onion, and broccoli. Stir-fry for 3–4 minutes until vibrant and crisp-tender. If needed, add a tablespoon of water to steam them slightly.

Combine: Return the beef to the pan. Pour in the sauce, followed by the cornstarch mixture (stir it again first). Cook for a minute until the sauce is thick and glossy. Add the noodles, toss to coat and warm through, then remove from heat.

Serve: Transfer to bowls, garnish with toasted sesame seeds and green onions, and serve immediately.
Tip for extra-tender beef
Want that restaurant-quality texture? About 15 minutes before cooking, toss the beef strips with a tablespoon of soy sauce, a teaspoon of cornstarch, and a small pinch of baking soda. This thin coating locks in moisture and ensures the meat remains incredibly tender after stir-frying.
