Crunchy Tofu and Cucumber Salad with an Addictive Asian Dressing

This refreshing and savory salad combines crunchy cucumbers, crispy tofu, and an addictive Asian dressing made with soy, lime, ginger, and chili crunch. It is hearty enough to serve as a satisfying light dinner.
Ingredients include 400 grams of extra firm tofu pressed and cubed, half a teaspoon of salt, black pepper, and three tablespoons of cooking oil.
To prepare, coarsely slice the cucumbers. Toss the tofu cubes with cornstarch, salt, and pepper until evenly coated. Heat oil in a wide skillet over medium-high heat, arrange the tofu in a single layer, and fry for 8 to 10 minutes until golden and crispy on all sides.
In a large bowl, whisk together garlic, ginger, apple cider vinegar, lime juice, soy sauce, maple syrup, sesame oil, and chili crisp. Lightly dry the cucumbers and add them to the bowl along with cilantro and green onions, tossing to combine.
Add the crispy tofu just before serving and toss gently to preserve the crunch.
