Warm Mushroom and Greens Salad
Ever since Ben Shay showed us a few tricks about preparing mushrooms, we have been looking for the ultimate recipe. Here is a fantastic idea: warm mushrooms piled high on a bed of fresh greens, taking no more than fifteen minutes and a single skillet. You can use champignon, portobello, or a delicious combination of both.
Sauté the mushrooms in olive oil, splash with balsamic vinegar, and let them cool slightly before tossing in chopped green onions. Wait just a bit longer before adding baby greens to create a dish that feels wonderfully autumnal.
Sautéed in olive oil and finished with balsamic vinegar, the mushrooms bring an earthy richness that transforms simple greens into a gourmet starter.
Persian Herb Rice and Meatballs
Rotem Liberson sets high expectations with her incredible meatballs, browned to perfection before joining slightly charred cherry tomatoes, okra, garlic, and chili. A squeeze of lemon juice and a splash of broth bring everything together in a quick simmer.

Meanwhile, Liza Panels brings us a vibrant green Persian rice whose flavor starts right in the blender. Coriander, garlic, and onion are blended with olive oil and water to create a fragrant seasoning paste.
Crunchy Roots and Chocolate Cake
Between the rich meatballs and aromatic rice, you will want something crisp and fresh. This fennel, kohlrabi, and carrot salad does the trick with just three vegetables and a basic dressing of olive oil, lemon, and salt.
For dessert, we chose a rich chocolate cake made with dark chocolate, coconut oil, and almond flour. Naturally pareve, it requires no whipping or egg separation—just melt, mix, and bake for a sweet finish.
