Ingredients

To prepare this cake, gather the following components:

  • Dry Base: 3 cups plus 2 heaping tablespoons (445g) all-purpose flour, 1 and 3/4 teaspoons baking powder, 1 teaspoon baking soda, 1/2 teaspoon salt.

  • Spices: 4 teaspoons ground cinnamon, 1/2 teaspoon ground cloves, 1/2 teaspoon ground allspice.

  • Wet Ingredients & Sugars: 1 cup (200g) vegetable oil, 1 cup (320g) honey, 1.5 cups (300g) granulated white sugar, 1/2 cup (110g) light or dark brown sugar, 3 large eggs (L), 1 teaspoon vanilla extract.

  • Liquids: 1 cup strong brewed coffee or tea, 1/2 cup freshly squeezed orange juice (or apple juice/applesauce), 1/4 cup whiskey (can be substituted with an additional 1/4 cup of juice).

Step-by-Step Instructions

  1. Preheat your oven to 180°C (350°F). Line three loaf pans (English cake style) with parchment paper or grease them thoroughly.

  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and spices until well combined.

  3. Make a well in the center of the dry ingredients and add the oil, honey, white and brown sugars, eggs, vanilla, coffee, juice (or applesauce), and whiskey.
